He had the Morton Salt girl tattooed on his left shoulder as a reminder, not to him but to the absent-minded line cook next to him, to “remember to SALT THE FOOD!” Like many, early in his career, he had to hide his ink in the Four-Star kitchens, where old-school chefs just didn’t get it. His drive and defiant spirit to be the best had him marked for greatness in the culinary world.
